Vegan, Gluten Free Spicy, Sweet & Sour Cabbage Slaw

With summer weather ☀️, I LOVE a crisp & quick salad to brighten up my meals 🥗 and this slaw enhances everything you eat with it!

It's vegan, gluten free, low carb AND ready in <10mins. What's not to love about it?

Vegan Spicy, Sweet & Sour Cabbage Slaw

Ingredients
2 cups thinly shredded cabbage (use the inner light coloured leaves & remove the spines)
1/2 red onion sliced fine
1/4 teaspoon ginger paste
1/4 teaspoon garlic paste
1/4 teaspoon paprika or cayenne
1/4 teaspoon salt
1 teaspoon sugar (or sweetener of choice)
3 to 4 Tablespoons Apple cider or rice wine vinegar.

Preparation
1. For extra crisp & crunch, place the shredded cabbage in ice cold water for 1hr+
2. Mix ginger, garlic, paprika, salt, sugar and vinegar until sugar and salt are dissolved
3. Drain cabbage thoroughly
4. Toss cabbage and onions together in a bowl
5. Mix in the dressing just before serving.
